
Ingridients:-
Paneer - Taken form 1 ltr
Peas - 1 cup
Onion - 1 (Big) Chopped
Tomatos - 2 (Big) Chopped
Turmeric - 1/4 tsp
Chilly pwdr - 1/2 tsp
Cumin pwdr - 1 tsp
Coriander pwdr - 1 tsp
Ginger garlic paste - 2 tbs
Cashewnuts - 7 (broken)
Oil - as needed
Salt
Green chillies - 2 (big) Optional
Cumin seeds - 1 tsp
Coriander leaves - 1/2 bunch (Chopped)
Kastoori methi leaves - handfull
Cream - 3/4 Cup
Whole garam masala
Method:-
1. Heat oil in a pan and fry cashews till they turn light brown.
2. Now add onions and salt. Cook till they turn slight brown color.
3. Add turmeric, Ginger garlic paste, Cook till they leave the raw flavour.
4. Now add tomatos and cook till the tomatos are fully cooked.
5. Blend the mixture and keep the sauce aside.
6. Now take a pan add oil, whole garam masala, Cumin seeds, When it splutters add the paste, water, green chillies, Coriander pwdr, Cumin pwdr and chilly pwdr.
7. After adding all the pwdrs cook this gravy in a medium heat for 15 min till the raw flavour goes.
8. After boiling it for 15 min add kastoori methi leaves and green peas ,cook for 10 min. Let it simmer for 5 min.

Ingredients: -
Spring roll sheets
Vegetables - Carrots, Capsicum, Onions, Spring onions, Cabbage (Shredded)
Aginomoto - a pinch
Salt - to taste
Pepper powder - 1/2 tsp
Chilly paste - 1 tbs
Cumin powder - 1/2 tsp
Egg wash
Oil - for frying
Method: -
1. Take a wide pan and add little water, salt and add all the vegetables.
2. Boil them till they are 90% done and squeeze the excess water through a dry cloth.
3. Add Cumin powder, Chilly paste, Aginomoto, pepper and salt. Mix them well.
4. Take a sheet and put the mixture in the middle. Roll it up and seal the edges with egg wash.
5. Deep fry in hot oil till golden brown and serve with ketchup.

Baby Potato Karakozhambhu
Recipe for Baby Potato Karalozhambhu

Ingredients:
Baby potato - 1/4 kg
Garlic - 10 to 12 (Whole)
Onions - 1 (medium) chopped
Tomato - 1 (medium) chopped
Mustard seeds - 1 tsp
Red chilly - 3
Green chilly - 2
Curry leaves - few
Fenugreek seeds - 1 tsp
Tamarind water - taken out from 1 lemon size
Turmeric - 1/4 tsp
chilly powder - 2 tsp
Coriander powder - 3 tsp
Salt - to taste
Hing - optional
Oil
Grind to a fine paste:
Coconut - 3 tbs
Pepper seeds - 1 tbs
Cumin seeds - 1 tsp
Method:-
1. Boil the baby potatoes (need not remove the skin) till its 80% done.
2. Add oil in a pan splutter mustard seeds, red chilly, fenugreek seeds, onions, turmeric and garlic.
3. Toss them till it turns light brown and add the tomatoes and potatoes.
4. Cook till the tomatoes are fully done.
5. Now add chilly powder, coriander powder, green chilly, curry leaves and little water.
6. Cover it up with a lid and let it cook for 5 min till the masalas get into the potatoes
7. Now add little tamarind water and coriander leaves.
8. Add the coconut paste and let it boil till the raw flavor leaves.
9. Serve hot with rice.

1) Dissolve Tamarind in 2 cup of water

3) Add Grind mixture, tamarind water, turmeric, Coriander and salt together.
4) Boil the mixture for 5 mins
5) In a small bowl add oil. Once the oil is hot add Mustard, Hind and Curry Leaves.
6) Add the above preparation to rasam.

Ingredients
Tamarind – 10 gms
Toor Dhal – ½ cup
Chopped Onion – 1 cup
For tempering
Mustard – 1 tsp
Jeera – 1 tsp
Fenugreek – 1 tsp
Curry Leaves – 10
Hing – 1 pinch
Sambar Powder – 11/2 tsp
Salt – 1 tsp or as required
Chopped Tomato – 1 cup
Oil – 2 tsp
Vegetable – You can add any one of the below vegetables or mixer of different vegetables. When Sambar mixed with these vegetables, each addition will give a unique taste.
a) Small onion – fried
b) Capsicum – cooked
c) Carrot – Boiled
d) Beans – Boiled
e) Drumstick – Boiled
f) Ladies finger – Boiled
g) Brinjal – Boiled
Vegetables are optional. Sambar can be made only with Onions and Tomatoes.
Method:
1) Mix Tamarind and Salt in warm water
2) Boil Toor Dhal in a Pressure Cooker ,Once Dhal is done smash it well
3) Now Mix Dhal, Samabar powder, Tamarind (Step1), Onion, Tomatoes and Vegetables
4) Add 2 cup of water. And allow the sambar to boil
5) Take a small bowl add 2 tsp oil.
6) Once the Oil is hot add mustard, Jeera, Fenugreek, Hing and Curry Leaves.
7) Add the above preparation to sambar.
8) Allow it to boil for 5 mins.

Cashew Biscuit

Ingredients
Maida - 150g
Powdered Sugar - 75g
Butter or dalda -100 g
Backing powder - ½ tbsp
Cashews - few pieces
Method:
1. In a bowl mix butter and backing powder together.
2. To it add powdered sugar and maida and prepare dough.
3. Keep the dough in an air tight container and leave it for 2 hours.
4. After 2 hrs take the dough and roll it like a big chapatti.
5. Now cut them into small circular biscuits.
6. Take a microwave safe plate and arrange these biscuits.
7. Now place a cashew on top of each biscuit and press it lightly.
8. Using the Convection mode bake the biscuits in 200 degrees for 10 or 15 minutes.
9. Home baked cashew biscuits are ready for your lovely kids.

Cucumber - 1 (Big)
Toor Dhal - 1 Cup
Cumin seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Turmeric - 1/4 tsp
Hing
Green chilly - 3
Curry leaves - 1 string
Red chilly - 4
Onions - 1/2 (medium) Chopped
Tomato - 1 (big)
Garlic - 5 or 6 (chopped)
Butter - 2 tbs
Lemon Juice - 1/2
Coriander leaves - 1/2 bunch
Method :-
1. In a wide pan add oil, red chilly, cumin seeds, mustard seeds and garlic.
2. Fry garlic till its slightly cooked and now add onions, curry leaves, green chilly, salt, hing and turmeric.
3. Just sweat the onions.
4. Add tomatoes, when it’s slightly cooked add cucumbers and little water.
5. Cover it with a lid till the cucumbers are slightly cooked (80%) in a sim flame.
6. Add the dhal and butter to cucumbers and let it boil till the consistency you like.
7. You can add little bit of lemon juice for sourness.
8. Sprinkle little coriander before taking off from the flame.

Ingredients:
Mushroom - 1/2 kg
Onions - 1 (Big)
Tomato - 1 (Big)
Whole garam masala
Cumin seeds - 1/2 tsp
Turmeric - 1/4 tsp
Ginger garlic paste - 1 tbs
Curry leaves - 1 string
Green chilly - 2 (Chopped)
Garlic - 5 to 6 cloves
Pepper powder - 1 tsp
Butter - 2 tbs
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Chilly powder - 3/4 tsp
Salt - to taste
Lime juice - little (Optional)
Coriander leaves - 1/4 bunch (chopped)
Method:
1. In a pan add oil and splutter whole garam masala, cumin seeds and chopped onion. Add salt.
2. When the onions sweat add turmeric and ginger garlic paste.
3. Toss them well and add curry leaves, Green chilies and tomatoes.
4. Cook tomatoes till they are slightly mashed up and now add some water, cover it with a lid and let it cook for 10 min.
5. When the tomatoes are cooked good add mushroom, little water and cover it up for few minutes.
6. When the mushrooms are fully cooked and water starts to evaporate transfer it to another vessel.
7. Meanwhile in a pan melt butter, mashed garlic, Cumin powder, pepper powder and chilly powder.
8. When the raw flavor leaves add the cooked mushroom and let all the water evaporate.
9. Add salt to your taste and squeeze some limejuice in the end.
10. Serve hot with Rice.

Ingredients
Finely chop the below items
Onion – ¾ cup
Tomato – 1
Green chilies - 2 or 3
Carrot – ½ cup
Potatoes – ½ cup
Bean – ¾ cup
Coriander leaves – ½ cup
Ginger garlic paste – 1 tsp
Coconut milk – ¼ cup
Curry leaves – few
Oil – 1 tsp
Salt – to taste.
Method
1. In a pressure cooker pour oil and add ginger garlic paste and fry for a minute.
2. To this add onions, green chilies and curry leaves and fry for a minute.
3. When the onions becomes half its quantity add tomatoes and fry for another one minute.
4. Now add all the vegetables and fry for a minute.
5. Pour water till the vegetables get soaked and add salt to your taste.
6. Close the lid and keep the cooker in medium flame and leave 4 or 5 whistles.
7. When the pressure releases, open the lid and slightly smash the vegetables.
8. Now add coconut milk and allow it to boil for a minute.
9. At last add the coriander leaves and transfer the kurma to a bowl.

Indian Pasta
Saturday, 7 November 2009Should Kids only enjoy this delicious Pasta???? NO. Now its time for the grown ups to eat this Yummy and delicious Pasta with cheese. Here is the recipe of Desi Pasta which has all the Nutritious value of vegetables and cheese. You can just surprise your guest with this wholesome meal and it takes much less time to cook than other ones.
Ingredients: Servings:- 6 persons
Pasta – 300 gms
Oil – 1 tbsp
Mustard Seeds – 1/2 tsp
Oregano - for flavor (optional)
Curry Leaves – few
Garlic – 2 tbsp (finely chopped)
Mushrooms – 250 gms, (sliced thick)
Red Onion – 1 med (chopped)
Red & Green Bell Pepper – 1 each (chopped)
Salt – to taste
Black Pepper – to taste
Red Chili Flakes – to taste (optional)
Soy Sauce – 3 tbsp
White Vinegar – 1 tbsp
Tomato Ketchup – 3 tbsp
Spinach – 1 cup, chopped
Cilantro – 10 sprigs, finely chopped
Shredded Cheese – 1.5 cups
Bread Crumbs – as needed
Butter – for topping
Cooking spray
Method:
1. Pre-heat the oven to 350 degrees Fahrenheit or boil water in a stove
2. Cook the Pasta as per package instructions with a little salt. Drain and keep aside. Wash it with cold water immediately.
3. Heat a medium size pan on medium heat.
4. Add Oil. Allow it to heat up.
5. Add in the Mustard Seeds and allow them to pop. Sprinkle little oregano for Italian touch.
6. Add in the Curry Leaves and the chopped Garlic. Cook for 30 seconds.
7. Add in the Mushrooms and a little salt (to speedup the cooking process) and turn up the heat/flame for this step.
8. The Mushrooms will let water go and then the water needs to evaporate.
9. Once that is done, add in the Onions and the bell peppers.
10. Sprinkle some Black Pepper and red Chili Flakes and saute for 3 minutes.
11. Add in the sauces – White Vinegar, Soy Sauce and Ketchup, saute for 1-2 minutes.
12. Add in Cilantro/Coriander Leaves and Spinach and give it a quick toss.
13. Lightly grease the casserole dish that is to be used for baking with Cooking Spray and keep aside.
14. Add the Pasta to the vegetables and give it a good mix.
15. Turn the stove off and add in the Shredded Cheese.
16. Mix well and mix very fast and pour the macaroni into the casserole.
17. Level the mixture and sprinkle some Bread Crumbs on top with a few blobs of Butter.
18. Bake for 8 minutes at 350 degrees F and then broil for 2 minutes to give it a golden color on top.
19. Serve hot with some garlic bread and/or some soup. Serves 8.
Tip:
1. If Pasta is not available, use any Macaroni .
2. Add in chopped Green Chilies for an additional kick.
3. Drizzle a little oil on the Macaroni after boiling and draining it. It will prevent it from sticking and clumping together.

Simple Chicken Gravy - Indian Kitchen
The below recipe Simple Chicken Gravy.
Ingredients:- Serving 2 persons
Capsicum - 2 (different colors)
Rice - 2 1/4 cup
Red chilly - 6
Mustard seeds - 1tbsp
Cumin seeds - 1tbsp
Coriander seeds - 2 tbsp
urad dhal - 2tbsp
Butter
Peanuts - 3 tbsp
Curry leaves - 10 to 13
Garam masala - 1/2tbsp
Salt as required
Method:-
1. Boil rice separately.
2. Take a pan and dry roast red chilly, Mustard seeds, cumin seeds, coriander seeds and urad dhal.
3. Cook in medium flame till urad dhal color changes to light brown.
4. Add peanuts and roast well.
5. When the mustard seeds crackle add the curry leaves to it.
6. Roast them well and grind it to a coarse paste with out adding water.
7. Melt butter or ghee in a wide pan and fry capsicum with salt.
8. Cook capsicum little less so that it doesnot losse its crunchy effect.
9. Add the ground powder to the capsicum and mix it for another 1 min.
10. Now add the boiled rice mix well and garnish it with coriander.

Corn – ¼ cup
Cashew – 20
Tooty- frooty - 2 tsp
Milk maid- ¼ cup
Milk – 1 cup
Sugar- ½ cup
Method
1. In a kadai pour little ghee and add the cashews until they are roasted and keep aside.
2. In the same pan add the corn and roast it for a minute.
3. After the corn starts crackling, pour the milk and allow it to boil for 3 mins.
4. Add sugar to this mixer and keep stirring.
5. Next add tooty-fruity, milk maid and roasted cashews and keep stirring.
6. Turn off the stove after 2 mins.
7. Delicious corn payasam is ready to serve.

Apple Halwa - Indian Kitchen

Sweet apple - 2
Ghee - 1/4 cup
Sugar- 1/4 cup
Milk powder – 2 tsp
Cardamom powder – 1 tsp
Cashew - 4
Method
1. Peel the skin of the apple and cut it into small pieces.
2. Grid the apple pieces finely without water in a mixer.
3. Keep aside the apple paste.
4. In a non-stick pan pour little ghee and add finely grated cashews and keep aside.
5. In the same pan add some more ghee and apple paste and keep stirring.
6. To this pour some more ghee and simmer the stove.
7. To this mixer add milk powder and sugar and keep stirring until the mixer gets separated from the pan.
8. Take the halwa in a bowl and garnish with the cashews.

PIZZA DOSA
Below Recipe for Pizza Dosa.
How about a pizza without yeast or flour. Yes this pizza is very easy and can be made on regular tawa /griddle and no baking.
Italian style
Ingredients:
Dosa batter
Onion- 1 medium chopped into thick pieces
Capsicum / bell pepper- 1 medium chopped into thick pieces
Mushroom- 4 chopped into thick pieces
Pine apple – 2 tbsp chopped
Pizza sauce 1 – 1 1\2 tbsp
Morzarella cheese – 2 tbsp
Oregano leaves – few sprinkles
Salt
Oil for spraying and frying the veggies
Can also add some chopped tomatoes, black olives
Method
Heat a tbsp of oil in a pan and add chopped onions and fry till light brown, next add capsicum and fry together for few minutes without making them mushy(they have to be crispy), next add in mushroom and fry for 3 -4 mts. Add salt just enough for them and mix well and keep aside.
Heat a tawa / griddle( see that it is not very high on flame). Then pour 2 ladle of batter and spread lightly, just like we pour in for uttappam. Wait for some time till you see some bubbles on top, next with a spreader spread the sauce all over on top. Next add the stir fried onions and veggies and pine apple chunks. Spread it along all over and also spread the morzella cheese on top and oregano leaves. Cover with a lid and cook till done and cheese melts. Remove and serve as it is or cut with a pizza cutter and serve.
South Indian style
Ingredients:
Dosa batter
For Pizza sauce:
Onion chopped lengthwise
Capsicum chopped lengthwise
Tomato chopped lengthwise
Cheese
Garlic - 2
Pepper powder - 2 tsp
Green chilli - 1 very finely chopped
Tomato sauce - 2 tblspns
salt as per taste
Method:
For pizza sauce
1. Take a pan
2. Put some oil add the onion and chilli and fry until it becomes soft
3. Add Garlic and fry
4. Then add pepper powder and salt.
5. cook for 5 mins and keep aside.
For Dosa:
1. Take Dosa pan
2. Add some oil and spread evenly
3. Keep the flame low.
4. Spread the dosa batter in a circular shape as thick as oothappam.
5. Allow it to cook for 10 seconds. Keep the flame very low
6. Apply the Pizza sauce evenly above this dosa.
7. Add all the vegetables evenly throughout the dosa
8. Finaly spread the cheese evenly.
9. Now cover this with one lid and cook until all the cheese melts and spread fully.
10. Serve hot with coconut chutney

Parupu Usilli - Indian Kitchen
This is a typical Tamil Brahmin dish. Make the best out of it with the below recipe for Parupu usilli
Channa dal – 1/2 cup
Beans, chopped or Banana Flower or Spinach – 1 1/2 cup
Dry red chillies – 3 or 4
Turmeric powder – a pinch
Asafoetida – a pinch
Mustard seeds – 1 tsp
Curry leaves – 4 or 5
Oil – 3 to 4 tbs
Method:
1. Channa dal in water for 1 hour.
2. Drain and grind the dal coarsely with dry red chillies, salt, and asafoetida .
3. Steam cook the ground mixture(2-3 whistles in a pressure cooker or keep it in the oven for 6-7 min till there is no moisture in the mixture). Allow it to cool and crumble it
3. Cook the beans or other vegetables separately and drain out the excess water.
4. Heat oil in a pan and sauté the mustard seeds, urad dal, turmeric powder and curry leaves. Add the crumbled mixture and the cooked beans.
5. Fry the mixture as per your liking

After seven days you will begin to fell lighter by at least 10 pounds. You will have an abundance of energy and improved disposition. During the first seven days you must drink 10 glasses of water each day.
DAY 1 :
All fruits except bananas. Your first day consist of all fruits you want. It is suggested you consume lots of melons the first day especially watermelon and cantaloupe.
DAY 2:
All vegetables. You are encouraged to eat until you are stuffed with all the raw and cooked vegetables of your choice. There is no limit on the amount or type. Avoid oil and coconut while cooking vegetables. Have large boiled potato for breakfast.
DAY 3 :
Any mixture of fruits and vegetables of your choice. Any amount, any quantity, no bananas yet and no potatoes today.
DAY 4 :
Banana and Milk. Today you will eat as many as eight bananas and drink three glasses of milk. You can also have 1 bowl of Vegetable soup.
DAY 5 :
Today is feast day. You will eat 1 cup of rice. You also have to eat six whole tomatoes and drink 12 glasses of water today to cleanse your system of the excess uric acid you will be producing.
DAY 6 :
Today is another all vegetables day. You must eat 1 cup of rice today and eat all the vegetables you want, cooked or uncooked, to your hearts content.
DAY 7 :
Today your food intake will consist of 1 cup of rice, fruit juice and the vegetables you care to consume. Tomorrow morning you will be five to eight Kgs. Lighter than 1 week ago. If you desire further weight loss repeat the program again. Repeat the program as often as you like. However, it is suggested that you rest for three days before every repetition.
You have your system under control now and it will thank you for all the purging and cleansing you just gave it. Even more than a diet program it is good to follow this diet once in a while to clean your digestive system and remove toxic substances that have accumulated in the system.
ADDITIONAL COMMENTS:
The most important element of the program is the 10 tall glasses of water a day. You can also flavor the water with some lemon to make the drink easier. While on the program take only black coffee and never more than one teaspoon of oil. Preferably do not use oil because of the high calorific content. No fruit juices before day seven.
Here is what happens to your body while you are on this program and how and why it works:
Day One:
You are preparing your system for the upcoming program. Your only source of nutrition is fresh fruits. Fruits are nature's perfect food. They provide everything you can possibly want to sustain life except total balance and variety.
Day Two:
Starts with a fix of complex carbohydrates in the form of a boiled potato. This is taken in the form of a boiled potato and taken in the morning to provide energy and balance. The rest of the day too consists of vegetables, which are virtually calorie free and provide essential nutrients and fiber.
Day Three:
Eliminates the potato because you get your carbohydrates from fruits. Your system is now prepared to start burning excess pounds. You will have cravings, which should start to diminish by day four.
Day Four:
Bananas and milk. You are in for a surprise. You probably will not be able to eat all the bananas allowed. But they are there for the potassium you have lost and sodium you may have missed the last three days. You will notice a definite loss of desire for sweets and you will be surprised at how easy this day will go.
Day Five:
Rice and tomatoes. The rice is for the carbohydrates and the tomatoes are for the digestion and fiber. Lots and lots of water purify you system. You should notice colorless urine today. Do not feel you have to eat one-cup rice, you may eat less. But you may eat six tomatoes.
Day Six:
It is similar to five. Vitamins and fiber from the vegetables and carbohydrates from the rice. By now your system is in a total weight loss inclination. There should be a noticeable difference in the way you look today compared to day one.
Day Seven:
You may celebrate with champagne. You may also have white wine instead of champagne, but in all practical programs, and in all surveys done to measure the success of the program, General Motors employees have always preferred champagne to white wine.
More than one cup of coffee with milk is especially forbidden. Milk and oil and empty calories to your diet. Coffee lovers can console themselves with black coffee. However, after the first week, it will help your digestion and set your stomach. The key thing to remember is that if you are hungry at any time, then you are not following the diet correctly. Almost all people give up the diet when they are hungry. If it is a vegetable day, eat as much vegetables that you are never hungry. If it is a fruits day, eat so much fruits that you are never hungry. You may be bored of eating vegetables all day, but you should not be hungry. You take any amount of wonder soup on any day.
WONDER SOUP
The following soup is intended as supplement to you diet. It can be eaten any time of day in virtually unlimited quantities. You are encouraged to drink large quantities of this soup.
23 oz water
6 oz large onions
2 oz green peppers
3 oz whole tomatoes
1 oz cabbage
1 oz bunch celery - add herbs and seasoning as desired
This program is highly recommended for women and men for whom excess weight is especially dangerous. Excess weight for women aggravates arthritis problems and leads to rapid joint decay. Pain and joint deterioration can be lessened by weight loss as weight loss removes the stress on the knee joint. Excess weight is the most crucial factor in keeping good health and excess weight is responsible for the most problems including coronary disease, heart problems, arthritis and cancer among other serious life threatening diseases. Most serious health problems can be avoided by the single function of maintaining an ideal weight. Daily mild exercise of 20 minutes is also essential Do no tire yourself out, but being regular in your exercise and maintaining an ideal weight goes a long way in ensuring a happy, healthy and long life.

Idly Manchurian
Recipe for Idly Manchurian
Idly - 6
All purpose flour - 1 tbsp
Channa flour - 1tbsp
Corn flour - 1tbsp
Ginger - 1 small piece
Green Chilli - 6
Garlic - 4
Cashewnut - 8
Tomato sauce - 1 tbsp
Salt - As required
Oil - As required
Method
Cut Idly into medium cubes
Mixture 1 - Mix All purpose flour, corn flour and channa flour.
Mixture 2 - Blend ginger, garlic,cashewnut, green chilli into paste
Mix mixture 1 and mixture 2 together and add tomato sauce and salt
Heat the Oil
Dip the idly's in the prepared mixture and fry it in oil
Serve it with Chutney
Tip : can be garnished with coriander

Vendakai Moore Kozambu(Bhindi Kadi)
Below is the recipe for Vendakai Moore Kozambu(Bhindi Kadi)
Ingredients: - Servings: - 4 persons
Ladies finger - 10 nos
Buttermilk or Curd - 2 cups
Coconut oil - 2 tbs
Mustard seeds - 1/2 tsp
Urad dhal - 1/2 tsp
Curry leaves - 1 string
Red chilly - 3
Onion - 1/2 small (chopped)
Salt - to taste
To be ground: -
Coconut - 1/4
Cumin seeds - 1 tsp
Green chilly - 2
Water
Method: -
1. Beat Curd once in a blender and keep aside.
2. Add oil in a pan and splutter mustard seeds, urad dhal, curry leaves, onion and ladies finger.
3. Fry for a while till the ladies finger gets cooked.
4. Now add the coconut paste and fry for a while till the raw flavor leaves.
5. Add the beaten curd, stir well and switch off the flame after 5 min.
6. Let it cool down and serve hot with boiled rice.

Baby Potato Fry
Ingredients: -
Baby potato - 1/4 kg
Cumin powder - 2 tsp
Coriander powder - 3 tsp
Chilly powder - 2 tsp
Turmeric - 1/4 tsp
Sombu powder - 1/4 tsp (optional)
Onion - 1 small (chopped)
Cashews - 10
Ginger garlic paste - 1 tsp
Oil
Salt
Tamarind - 1 (lemon size)(dissolve it in water)
Curry leaves
Method: -
1. Make a thick paste with the above ingredients with out potato.
2. Boil and peel the potatoes. Don’t over cook.
3. Cut them into half and mix it with the marinated past and keep aside.
4. Deep fry the potatoes in the pan.
5. Serve hot with rice.

Karaikudi Fish Kuruma
A Special ethnic dish of Tamilnadu. The spices and the method of preparation make the dish so unique and great. The below is the homemade recipe from Karaikudi.
Recipe for Karaikudi Fish Kuruma
Ingredients: -
To be marinated:
Fish - 300 Gms
Chilly powder -2tsp
Turmeric
Coriander powder - 3 tsp
Salt
Tamarind water - 4tsp
Grind it to a paste:
Coconut - 1/2
Cumin seeds - 1 tsp
Ginger
Garlic
Oil
Mustard seeds - 1 tsp
Onion - 1 (medium)
Red chilly - 3
Vendhayam/Fenugreek
Curry leaves
Green chilly - 4 (chopped)
Tomato Paste - 1 cup
Chilly powder - 1 tsp
Coriander powder - 3 tsp
Turmeric
Tamarind water - 1 lime size
Pepper Powder- 1 tsp
Salt
Coriander leaves
Method: -
1. Add oil in a pan and splutter mustard seeds, red chilly, Vendhayam/Fenugreek, Curry leaves, onion.
2. When onions turn slight brown add green chilly and tomato paste.
3. Toss for 5 min and add coconut paste, chilly powder, turmeric, coriander powder and tamarind water.
4. Let it boil nicely and when the raw flavor leaves add the fried fish.
5. Now add salt and pepper powder and boil for 2 min.
6. Garnish with coriander leaves and serve hot with rice

Recipe for Chicken Varuval(Chicken Fry)
Ingredients: -
Chicken - 1/2 kg
Red chilly - 10 (Soak in hot water)
Coriander powder - 2 tsp
Turmeric - 1/4 tsp
Curry leaves
Fennel seeds
Garlic - 10
Ginger garlic paste - 2 tsp
Green chilly - 2 (slit)
Tamarind water - Lime size
Onion - 1 medium (Chopped)
Pepper - 1tsp
Salt
Coriander leaves - 1/2 bunch
Lemon juice - 2tsp
Curry leaves
Method: -
1. Grind the soaked red chilly with little water and lemon juice. Make a thick paste.
2. Marinate chicken with chilly paste, Coriander powder, turmeric, and salt and tamarind water.
3. Add oil in a pan, put sombhu, curry leaves and onions.
4. When the onions sweat add ginger garlic paste and fry for a while.
5. Now add the chicken to the onion and fry in medium heat.
6. Sprinkle some water on the chicken and cover with a lid till its cooked.
7. Add little pepper, Coriander leaves and curry leaves for garnishing.
